10 oz canned tomatoes with green chilis
1 cup instant long grain and wild rice mix
1/2 cup water
1 medium green pepper
2 small onion(s)
2 cup Kraft 2% Finely Shredded Sharp Cheddar Cheese
16 oz fat-free canned refried beans
10 small fat-free flour tortilla(s)
1 cup salsa
Preheat oven to 350. spray cookie sheet with nonstick spray. combine rice water anddiced green pepper in a sauce pan and bring to a boil. reduce heat and simmer 1 minute. remove from heat and let stand 5 minutes. stir in diced green onions and 1 cup of cheese. spread 3 tablespoons of refried beans over each tortilla, then spread rice micture over beans. roll up and place on cookie sheet seam side down and cover with foil. Bake in preheated oven for 25 minutes. cut each tortilla into 4 pieces and place on warmed serving platter topped with salsa and remaining cheese. makes 40 bite size burritos.
I am counting a serving as two burrito bite. the tortillas need to be six inch.
