kashi holiday stuffing

Kashi Holiday Stuffing
Makes 12 servings. Stuffs one medium turkey, or makes a good side dish.
Ingredients:
2 teaspoons extra virgin olive oil
2 cloves fresh garlic, peeled and finely chopped
1 medium onion, chopped
1/4 cup bell pepper, diced
1/4 cup celery, diced
1/8 tsp thyme
1 small bay leaf
1 packet Kashi Pilaf, cooked (2-1/2 cups)
1/2 cup vegetable broth
2 cups pears, chopped
1/2 cup pecans, chopped
1/4 cup raisins

Directions:
Melt 1 teaspoon olive oil in skillet. Add the garlic and sauté lightly. Add onion, bell pepper, celery, thyme and bay leaf. Sauté vegetables approximately 3 minutes. Add cooked Kashi Pilaf and gently blend in along with vegetable broth. Remove bay leaf. Set Kashi Pilaf and vegetables aside.

In another skillet, melt remaining olive oil. Add pears, pecans and raisins and mix together well. Sauté lightly for 3 minutes. Add fruit and nut mixture to Kashi Pilaf and vegetables. Blend well and use for stuffing.

Variations: Use can also use chicken broth instead of vegetable broth if you prefer.
