green beans and squash in mustard wine sauce

Ingredients

1 cup(s) green snap beans
1/2 cup(s) water
3 medium zucchini
1 medium summer squash
1 small onion(s)
1/2 cup(s) fat-free chicken broth
3 oz white wine
1 small onion(s)
1 1/2 tbsp cornstarch
1/2 tsp dried tarragon
2 tsp Dijon mustard
1/4 tsp black pepper
1 tbsp butter

Instructions

place beans and water in 2 quart microwave casserole. Microwave on high, covered, for 8 minutes. add thin sliced zucchinni and thin sliced summer squash and chopped onion. Microwave 5-7 minutes more and drain. to make marinade combine last 7 ingredients in a 2 cup glass measuring cup. Microwave uncovered for 2-3 minutes, until thick and bubbly, stirring every minute. stir in butter. Toss with veggies

Special Notes

onion should be chopped or diced. I would use a sweet onion or a red onion

you can substitute vegetable broth for the chicken broth
