poached salmon with melon salsa

Ingredients

1 small onion(s)
1 1/2 tsp mint leaves
1 tsp ginger root
3 tbsp lime zest
1 1/2 pound salmon fillet(s)
1 medium honeydew melon
1 item(s) bell pepper(s)
1/4 cup(s) fresh lime juice
1/2 medium onion(s)
1 medium jalapeno pepper(s)
2 tbsp mint leaves

Instructions

Preheat oven to 450 in a small bowl mix chopped green onion, chopped mint, lime xest nad grated fresh ginger. place 6 pieces of aluminum foil, each 10 inches square on counter work space. place a salmon fillet in foil. sprinkle equal ammounts of mixture on each fillet. flod and seal each . place the packages on a baking sheet single layer and bake 12-15 minutes until opahue through out. to make salsa take peeled, skin and cube honey dew melon, dice yellow bell peppr, chop red onion, mince jalepeno pepper. mic melon, bell pepper, jalepeno pepper, lime juice, onion, and 2 tablespoons chopped fresh mint. To serve transfer, the contents of each package onto an individula plate and top with salsa.

Special Notes

the small onion should be the tops from 2 spring onions thinly sliced.

The fillets should be cut into six serving pieces and skinned


This can be cooked on the grill also
